Adding more vegetables with varying colors to our meal adds a gut-bug diversity [How to make disease disappear, Chatterjee, 2019]. Different colors have different phytonutrients that help our hearts and reduce inflammation. Beets, Broccoli, Carrots, add all of them to your diet; they are not only pleasing to eyes but also great for our health!

Beets are a flag bearer of color in the veggies, and it makes the case firmly. Chop fresh beets and witness it, leaving its deep red marks on the cutting board, knife, hands, silverware, or cookware! To me, cooking with beets is as therapeutic as eating them! You feel you are adding health supplements to the dish.

Therefore, I buy a lot of them, especially with the leaves, then think about new recipes to make with them. This Beets and Garlic dip that I’m going to share in this post is good to spread on your sandwich, add as a hot side with meals or chips.

I developed this recipe after discussing with my mom – we debated whether to boil or roast beets, whether roasting garlic would enhance the flavor or not, etc. I hope you give it a shot! 

How to make Beets and Garlic Dip?

Ingredients

  • 3 cup cut Beets (2 medium-sized beets)
  • 6 cloves garlic
  • 2 Tsp salt
  • 4 Tbsp olive oil
  • 1/4 cup cilantro, coriander leaves
  • 1 green chili – per taste
    • I use Serrano pepper
  • 1 Tsp cumin powder
  • 1 cup water
Step 1

Add chopped Beets and garlic clove in a bowl. Add 1 Tbsp oil and 1 Tsp salt and mix well. 

Step 2

Bake for 15 minutes at 350° F.

Step 3

Let the Beets and Garlic cool down. Add all ingredients in a blender. Blend to a smooth paste. You may increase water per the desired consistency. 

Step 4

Serve with chips, meal, or sandwich!
