A while ago, I had compiled a post on “10 healthy foods to eat everyday!” Banana was on that list because of its benefit of providing high potassium content among others. So, I try to come up with recipes using a banana. Last week, I shared a mint-banana smoothie, and this post is about a dessert bite that I’m sure you will like – frozen banana-nut bites. The resulting texture of these frozen banana nuts bites is that of a gelato or soft in nature.
Although I don’t have a sweet tooth, I try making bite-sized desserts for those occasional sweet urges. These frozen banana-nuts bites are one of those, and since my family relished it, I decided to post it on the blog! If your kids love bananas – this is an excellent dessert with packed nutrition for them as well.
How to make Frozen Banana Nuts Bites?
Step-by-Step Instructions
Serves:
6-8 Bites
Ready In:
20 mins Preparation and 5 hours freezing time
Diet:
Vegan,
Gluten-Free
Ingredients
- 1 Ripe Banana
- 1-2 teaspoon cocoa powder
- 1/4 cup cashew nuts
- 1/4 cup walnuts
- 1/4 cup rolled oats
- 1 pinch cardamom or cinnamon powder (per your choice)
- 1/2 inch ginger (optional)
- 2-3 dates per taste (I use Medjool dates)
- 2 teaspoon lemon juice (optional)

Step 1
Roast Nuts and oats for 20-25 minutes at 370 deg F until oats are roasted well.
You may also roast them in a pan on the stovetop until brown.
Step 2
Save 2 tbsp of nuts for garnishing and crush them coarsely. Keep them aside.
Step 3
Deseed the dates and peel the banana.
Step 4
Blend the banana, roasted oats, roasted whole nuts, lemon juice and all other ingredients. Please don’t blend the crushed nuts which you kept aside in Step 2 above.
Step 5
In a tray put parchment paper and spread the blended banana, nuts and oats paste in a thin ~1/2 inch layer. Garnish with roasted and crushed nuts.
Step 6
Freeze for 4-5 hours; cut into bites and serve. The resulting texture should be that of a gelato or soft and not hard cubes.

Expected Questions for making Frozen Mint-Banana bites
1. Can I replace Banana with another fruit?
Yes, you may replace with papaya, ripe pear or a ripe persimmon.
2. Can I skip oats?
Certainly so; just add more nuts in its place.
3. Can I skip cocoa?
Cocoa gives a little chocolaty flavor – you may skip it, and the resulting bites still taste good but taste a little more banana-ish.
4. In spite of freezing, the resulting bites are still soft?
That is the expected texture! It doesn’t get very hard – just a little chewy like gelato.
5. Can we use frozen bananas?
Yes, please go ahead!
6. Can I leave the bites outside after having one serving?
No; please keep these bites frozen in the freezer. They lose texture if left outside and the banana will go through browning.

It is so yummy and perfect treat for kids in summer. The best part, it is a healthy substitute for people having sweet tooth and who can’t control their midnight cravings for ice cream. My entire family just loved it and ate a lot of it guilt free.
