Peanut stuffed dates bites – these are sweet and have a little crunch from peanuts. The mix of lemon and coconut is such a great flavor, healthy and perfect for sweet cravings.

I have been making a variety of dates bites for long. And the other day, my sister reminded of peanut-stuffed dates (deseeded dates and instead peanuts put in) we used to have growing up. That’s where the idea germinated to make these peanut-stuffed date-coconut-lemon bites!
They are a perfect blend of flavors with crunch inside! A must-must try for quick and healthy energy bites.
How to make Peanut-stuffed dates, lemon, and coconut bites?

Ingredients

6 dates (I use Medjool dates)

1/2 cup desiccated coconut

2 tbsp pumpkin seeds (optional)

1 tbsp lemon juice

1/4 cup roasted peanuts

1/4 teaspoon salt

1 tbsp cocoa powder (optional)
Step 1
Using a blender, blend all the ingredients, except peanuts. Keep 2 tbsp coconut aside. You should get a soft paste/dough-like consistency.
Step 2
Now, take small chunks and roll into bite-sized balls.
Step 3
Make a groove and add peanut (1-2) inside, close, and roll to form the bites so that the peanuts are covered.
Step 4
Roll a few balls with desiccated coconut. Serve.

Notes
- You may replace peanuts with roasted cashew or roasted almonds.
