Nutritious, quick-to-make, and flavorful Spinach Rice, is a great side for Dals (Lentils), Hummus or Veggies – make it in Instant-pot or Stove-top pressure cooker. 

With current times, when we are all at home due to the virus spread, I’m trying to keep our meals as easy yet nutritious as possible. Moreover, many of us are managing with fewer ingredients. Having said that, we are (and must be) grateful that we are privileged to have food on our plates.

One side dish which I often prepare these days is “Spinach Rice.” It is a delicious and healthy Basmati Rice recipe. You could pair it up with Yogurt, Hummus, or any Daal (Lentil Curry/Soup). I also have a post with five Daal recipes here, which could be of help.

This Spinach Rice recipe is also excellent for serving to toddlers and kids – a bowl of nutritious colored Rice!

Spinach is a rich source of iron, folic acid, Magnesium, and Calcium among others [Sears et al., 2010]! Therefore, it is good for fighting inflammation, and a great anti-oxidant! Rice is, of course, rich in Carbohydrates, which our bodies need for Cell growth. Add both together to make a perfect one-pot side dish.

What is the typical Rice to Water Ratio for cooking Basmati Rice?

These are my mom’s tips for Rice to Water ratio for cooking Basmati Rice and work great for me.

(a) For Pressure cooking, the ratio is 1 to 1 (1:1) for rice that is soaked for an hour or two.

(b) For Pressure cooking, the ratio is 1 to 1.25 (1:1.25) for rice that is just washed and not soaked.

(c) For cooking without the lid on, the ratio is 1 to 2 (1:2).

What are the Key Ingredients for Spinach Rice?

  • 1 Cup Basmati Rice
  • 1 Cup Coarsely Chopped Spinach
  • 2-3 Tsp salt (per taste)
  • 1 Cup Water for Soaking and 1 Cup for cooking
  • 1-2 cloves garlic
  • 2 tbsp Ghee/Plant-based oil
  • Spices
    • 2 Bayleaves
    • 2-3 cloves

How to make “Spinach Rice”? 

Step-by-Step Instructions

Step 1

Soak Rice in water for an hour. You may skip this step and just rinse with water a few times. If you haven’t soaked the rice, the water required for cooking is 1.25 cups.

Step 2

Add Spinach, Water, and garlic to the blender and blend to form “spinach water.” Again, if you soaked the rice, use 1 cup water, else 1.25 cups. 

Step 3

Put the Instant Pot in Saute Mode and add Ghee/Oil.

Step 4

Add Bay leaves and cloves.

Step 5

Rinse the water from soaked rice and add to the pot. Stir occasionally the rice for a minute. This will result in a great texture of rice. 

Step 6

Add Spinach Water prepared in (2) above, salt and close the lid in sealed mode. 

Step 7

Adjust the setting to “Rice”. 

Step 8

Let the pressure release naturally. For Pressure cooker on a stove top, one whistle and natural pressure release will cook the rice fine. 

Step 9

Serve hot Rice with Yogurt, Hummus, or Lentil Curry of your choice.

Notes

You may use Kale instead of Spinach.
You can add chopped spinach leaves to rice directly without blending. However, preparing it this way makes it kid-friendly.
