  • 1 Banana Ripe
  • 1-2 teaspoon cocoa powder
  • 1/4 cup cashew nuts
  • 1/4 cup walnuts
  • 1/4 cup rolled oats
  • 1 pinch cinnamon or cardamom powder
  • 1/2 inch ginger
  • 2-3 Dates
  • 2 teaspoon lemon juice optional

  • Roast Nuts and oats for 20-25 minutes at 370 deg F until oats are roasted well.
You may also roast them in a pan on stovetop until brown.
  • Save 2 tbsp of nuts for garnishing and crush them coarsely. Keep them aside.
  • Deseed the dates and peel the banana.
  • Blend the banana, roasted oats, roasted whole nuts, lemon juice and all other ingredients. Please don't blend the crushed nuts which you kept aside in Step 2 above.
  • In a tray put parchment paper and spread the blended banana, nuts and oats paste in a thin ~1/2 inch layer. Garnish with roasted and crushed nuts.
  • Freeze for 4-5 hours; cut into bites and serve. The resulting texture should be that of a gelato or soft and not hard cubes.

1. Can I replace it with another fruit?
Yes, you may replace with papaya, ripe pear or a ripe persimmon.
2. Can I skip oats?
Certainly so; just add more nuts in its place.
3. Can I skip cocoa?
Cocoa gives a little chocolaty flavor – you may skip it, and the resulting bites still taste good but taste a little more banana-ish.
4. In spite of freezing, the resulting bites are still soft?
That is the expected texture! It doesn’t get very hard – just a little chewy like gelato.
5. Can we use frozen bananas?
Yes, please go ahead!
6. Can I leave the bites outside after having one serving?
No; please keep these bites frozen in the freezer. They lose texture if left outside and the banana will go through browning.
