Peanut-stuffed dates lemon and coconut bites

Peanut stuffed dates bites - sweet and a little crunch from peanuts. The mix of lemon and coconut is such a great flavor and perfect for any sweet cravings.

Ingredients

  • 6 Dates I use medjool dates
  • 1/2 cup desiccated coconut
  • 2 tbsp pumpkin seeds optional
  • 1 tbsp lemon juice
  • 1/4 cup peanuts
  • 1/4 teaspoon salt
  • 1/2-1 tbsp cocoa powder optional

Instructions

  • Using a blender, blend all the ingredients, except peanuts. Keep 2 tbsp coconut aside. You should get a soft paste/dough like consistency. 
  • Now, take small chunks and roll into bite-sized balls. 
  • Make a groove and add peanut (1-2) inside, close, and roll to form the bites so that the peanuts are covered.
  • Roll a few balls with desiccated coconut. Serve.

Notes

  1. You may replace peanuts with roasted cashew or roasted almonds.
  2. You may replace pumpkin seeds with sunflower seeds.
